Add a dash of Greek olive oil to a hot pot.

Once the oil is warm, add the chopped onions and sauté for about three minutes.

Add the shredded carrots, cover, and sauté for another two minutes.

Add the Greek kefarakia to the pot.

Using the same cup, add an equal amount of water to the pasta and stir well.

Cover the pot and cook on medium heat for about five minutes until the water has evaporated.

Reduce the heat to medium-low and slowly add the milk and spices (sweet paprika, black pepper, and salt).

Cover and continue cooking for about 10 to 15 minutes on low heat.

After about 15 minutes, when the liquid has dried out, add the feta and stir well.

Cover and set aside for about 10 minutes away from the fire.

Serve on a plate, garnish with some feta and green onions, drizzle with Greek olive oil, and finish with a bit of smoked paprika.
