In a large mixing bowl, combine the cream cheese, sour cream, mayonnaise, smoked Gouda cheese, Parmesan cheese, smoked paprika, garlic powder, and Lipton Onion Soup mix. Mix until smooth.
Fold in the grilled spinach and artichokes, ensuring everything is evenly combined.
Spoon the mixture into a cast iron skillet or foil pan. Sprinkle a bit more shredded smoked Gouda and Parmesan on top for a bubbly, golden crust.
Set up your Weber Kettle for indirect smoking at 250°F and add wood chips like hickory or applewood.
Place the skillet on the Weber Kettle and smoke for 30-40 minutes, or until the dip is hot, bubbly, and golden on top.
