Let the bread sit out for a few hours until it is dried out but not stale.
Tear the dried bread into shreds and place them in a food processor.
Add 1 cup of panko bread crumbs to the food processor.
Add 1/4 cup of grated parmesan cheese to the food processor.
Add 2 tablespoons of chopped fresh parsley to the food processor.
Add 1 teaspoon of dried oregano to the food processor.
Add 2 cloves of minced garlic to the food processor.
Add 1/2 teaspoon of kosher salt and a pinch of black pepper to the food processor.
Pulse the mixture in the food processor about 8-10 times until it is coarse but not too fine.
Set up a breading station with three pans: one with 1 cup of all-purpose flour, one with 2 eggs beaten with 1 tablespoon of water and 1 tablespoon of milk, and one with the breadcrumb mixture.
Cut the mozzarella cheese into medallion slices or sticks.
Dredge each piece of mozzarella in the flour, shaking off excess flour.
Dip the floured mozzarella into the egg mixture, coating completely.
Roll the egg-coated mozzarella in the breadcrumb mixture, pressing gently to adhere.
Repeat the process for all pieces of mozzarella and place them on a plate or baking sheet.
Heat oil in a deep fryer or large pot to 350°F.
Fry the mozzarella pieces in batches until golden brown, about 2-3 minutes per side.
Remove the fried mozzarella from the oil and drain on paper towels.
