Trim ribeye steaks down real thin and place in the freezer for 30-45 minutes to firm up.
Coat the ribeye with olive oil and season with swine life Prime Beef seasoning; let marinate.
Preheat the Big Green Egg to around 350-400°F.
Melt butter in a cast iron pan and add chopped onions; season with swine life Prime Beef.
Cook onions for about 10 minutes until soft, stirring periodically, then remove from the grill.
Add the thinly sliced ribeye to the same pan and cook for about 5 minutes until browned but still pink.
Lower the grill temperature to about 350°F.
Cut the tops off Kings Hawaiian rolls and lay down pepper jack cheese on the bottom halves.
Layer the cooked steak and onions on top of the cheese.
Add slices of provolone cheese on top of the steak and onions.
Brush the tops of the rolls with melted butter and sprinkle with more swine life Prime Beef seasoning.
Place the assembled sliders back on the grill for about 5 minutes to melt the cheese and brown the tops.
