Crispy Sea Bass with Cherry Tomato & Olive Butterbeans and Dill Caper Greek Yogurt

Season sea bass fillets with fennel seeds, coriander seeds, garlic powder, lemon zest, lemon juice, salt, and pepper.
Heat a small knob of butter in a skillet over medium heat until melted.
Place the sea bass fillets skin-side down in the skillet and cook until crispy, about 4-5 minutes.
Carefully flip the sea bass and cook for another 3-4 minutes until cooked through.
Remove sea bass and keep warm.
In the same skillet, add chopped white onion and garlic; sauté until softened, about 2-3 minutes.
Add cherry tomatoes, black olives, and butterbeans; cook until tomatoes burst and mixture is heated through, about 4-5 minutes.
Stir in red pesto, chilli flakes, and oregano; season with salt and pepper to taste.
In a bowl, combine Greek yogurt, capers, dill, extra virgin olive oil, lemon zest, lemon juice, minced garlic, and black pepper; mix well.
Serve the crispy sea bass on a plate topped with the cherry tomato and butterbean mixture.
Drizzle with dill caper yogurt and garnish with parsley.
