Brown Rice Pulao

1 tsp oil
1 tsp ghee
1 bay leaf
2 cardamom
1 star anise
a small piece of cinnamon
4 to 5 cloves
1 onion
2 green chillies
1 tsp ginger garlic paste
1 small potato
4 to 6 beans
1 small carrot
few florets of cauliflower
few florets of broccoli
1/4 cup green peas
salt as required
few mint leaves
1 tsp coriander powder
1/2 tsp garam masala
2 cups water
1 cup basmati brown rice

Heat oil and ghee in a pan.

Add bay leaf, cardamom, star anise, cinnamon, and cloves; sauté for a minute.

Add sliced onion and green chillies; cook until onions are translucent.

Stir in ginger garlic paste and sauté for a minute.

Add diced potato, beans, carrot, cauliflower, broccoli, and green peas; mix well.

Add salt, coriander powder, and garam masala; stir to combine.

Add water and bring to a boil.

Add rinsed basmati brown rice; stir well.

Cover and cook on low heat until rice is done and water is absorbed.
