Brown Rice Pulao

1 cup brown rice, soaked for ½ hour and drained
1 tsp oil
1 tsp cumin seeds
1 inch cinnamon stick
1 bay leaf
2-3 cloves
2 medium carrots, cut into squares
10-12 French beans, cut into ½ inch pieces
¼ medium cauliflower, separated into small florets
5-6 medium fresh button mushrooms
½ cup green peas, shelled and blanched
Salt to taste
2 green chillies, slit
2 tbsps finely chopped fresh coriander leaves

Heat oil in a non stick pan, add cumin seeds, cinnamon, bay leaf and cloves and sauté for a minute.

Add carrot, beans and cauliflower and sauté for 2 minutes.

Halve mushrooms and add along with green peas and salt. Mix well and cook for 2 minutes.

Add rice and 2½ cups water and mix. Add green chillies and mix again.

Add coriander leaves and mix well. Cover and cook on medium heat till rice is done. Switch off heat and let it stand for 10-12 minutes.

Serve hot.
