Chop 1 large shallot or 2 tablespoons of yellow onion and mince it.
Mince 1 garlic clove.
Shred 4 oz of VY cheese and 4 oz of cheddar cheese.
Chop a few tablespoons of green onion for topping, or use parsley instead.
Cut 4 croissants in half and then into cubes.
Grease a 9x13 casserole dish with 1 teaspoon of salted butter.
Preheat the oven to 375°F.
In a skillet over medium heat, break up 16 oz of breakfast sausage and cook until no longer pink.
Add the chopped shallot and minced garlic to the skillet and stir until fully cooked.
Let the sausage mixture cool for about 10 minutes, draining excess grease if necessary.
Transfer the cubed croissants into the greased 9x13 pan, ensuring they cover the bottom.
In a bowl, crack 5 large eggs and add 1 cup of whole milk and 1/4 cup of half and half.
Add 1 teaspoon of Dijon mustard, salt, and pepper to the egg mixture and whisk until combined.
Stir in half of the shredded cheese into the egg mixture without whisking it in completely.
Scatter the sausage mixture evenly over the croissants in the casserole dish, including the onions and shallots.
Pour the egg mixture over the casserole, ensuring it covers the croissants.
Gently toss the mixture with a spoon to ensure the croissants are coated without shredding them.
Sprinkle the remaining cheese on top of the casserole.
Cover the casserole with foil and bake in the oven at 375°F for about 40 minutes.
Broil for a few minutes at the end to crisp the cheese on top.
If prepping ahead, assemble the casserole the night before but add ingredients together in the morning to avoid sogginess.
Top with chopped green onion or parsley after cooling, then cut into squares to serve.
