12 Chicken Thighs
3 lbs. of yellow potatoes
1 whole onion diced
1 green pepper diced
4 cups of chicken broth
1 cup of white wine
1 cup of tomato sauce
¾ cup of sofrito
1 ½ cups of carrots and celery diced
3 tbsp of olives and capers
2 tsp of black pepper
1/2 tsp of turmeric
1 tsp of paprika
½ tsp of red crushed pepper
2 tsp of granulated garlic
2 tsp of onion powder
1/2 tsp of cumin
1 tbsp of salt
4 chopped garlic cloves

Clean and trim chicken fat out of the chicken thighs. Season to your liking.

In a heavy bottom pan, add oil on medium heat. Add chicken skin side down and brown the chicken on both sides.

Once the chicken is browned, remove from the pot. Drain fat.

Add aromatics (onion, pepper, celery, carrots). Sauté. Deglaze with white wine.

Add sofrito, tomato sauce, olives and capers, and all the seasonings.

Add chicken stock and bring to a boil.

Add chicken then bring to a boil.

Add your potatoes, bring to a boil.

Reduce to a simmer, cover and cook for about 25 minutes until the chicken and potatoes are cooked. The sauce should have the consistency you are looking for as well.

Adjust seasonings if needed.
