Chop 4 cups of apples into 1/2 inch cubes, leaving the skin on.
Transfer the chopped apples into a large non-stick skillet.
Add 3 to 4 tablespoons of water to the skillet with the apples.
Turn the heat to medium-high and cover the skillet with a lid.
Cook the apples for about 5 minutes until they come to a gentle simmer.
Remove the lid and let the apples cook for another 2 to 3 minutes to evaporate excess water.
Check that the apples are fork tender but still hold their shape.
Add 1.5 teaspoons of butter to the skillet and let it melt, coating the apples.
Stir in 1.5 tablespoons of real maple syrup, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and a pinch of sea salt.
Gently toss the apples to coat them in the butter and spices, cooking for another couple of minutes.
Turn off the heat and let the apples cool slightly before transferring them to an airtight container.
