Ingredients

  • 4 slices whole grain bread
  • 4 oz cream cheese, softened
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp fresh chives, chopped (optional)
  • 1 tbsp olive oil (for grilling)

Instructions

  1. 1Spread cream cheese evenly on one side of each slice of bread.
  2. 2Sprinkle garlic powder and black pepper over the cream cheese on each slice.
  3. 3Layer the sliced red and yellow bell peppers on two of the slices, on top of the cream cheese.
  4. 4If using, sprinkle chopped chives over the bell peppers.
  5. 5Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  6. 6Heat olive oil in a skillet over medium heat.
  7. 7Grill the sandwiches for about 3-4 minutes on each side, or until golden brown and the cream cheese is warm.
  8. 8Remove from skillet and let cool for a minute before slicing in half.
  9. 9Serve immediately.

Instructions
