Show the flank steak, stating it weighs one pound and is about one inch thick.
Pour about a half pint of Guinness into a mixing bowl.
Press in two cloves of garlic using a garlic press into the bowl.
Add two teaspoons of dijon mustard to the bowl.
Mix the marinade using a whisk or fork.
Submerge the flank steak in the Guinness marinade, ensuring it is covered.
Cover the bowl with plastic wrap and refrigerate for at least four hours.
Preheat the Weber Q grill on high for about 15 minutes.
Season the grill grates with olive oil or avocado oil to prevent sticking.
Remove the steak from the marinade and pat it dry with a paper towel on both sides.
Season both sides of the steak with salt and black pepper, patting it into the surface.
Place the flank steak directly across the grill grates.
After about 2 to 2.5 minutes, turn the steak 90 degrees for cross-hatch grill marks.
After another 2 to 2.5 minutes, flip the steak over and close the lid.
Cook for an additional 4 to 5 minutes, checking for desired doneness.
Remove the steak from the grill after about 9 to 10 minutes, depending on thickness and doneness.
Let the steak rest for about 10 minutes before slicing.
Cut the steak against the grain into bite-sized pieces.
Garnish with chives before serving.
Serve with potatoes and another pint of Guinness.
