Take some potatoes that have been pre-boiled and peeled, leave them in the fridge overnight to become firm.
Slice the potatoes into 1/4 cm slices.
Place the sliced potatoes on a plate and put them into the fridge to dry out for extra crispiness.
Slice the smoked bacon into strips and then into thick cubes.
Slice the onion into fine slices.
Heat vegetable oil in a large hot pan.
Fry the potatoes in one layer until they turn brown, flipping them occasionally.
Once most potatoes are brown, move them to the side of the pan and add the bacon in the middle to render the fat.
Once the bacon is crispy, toss the potatoes and bacon together.
Add the onions and a knob of butter to the pan and toss everything together until the potatoes are evenly browned.
Serve the potatoes with a piece of steak and broccoli puree.
