Boil 1.2 kilos of white potatoes in slightly salted water for 15 minutes and cool down rapidly with cold water.
Peel the potatoes using a knife.
Slice the potatoes into nice size chunks.
Heat 6 tablespoons of olive oil in a large frying pan over medium to high heat.
Fry the smoked bacon for about 4 minutes until crispy to season the oil.
Remove the bacon and reserve it for garnish.
Add the sliced potatoes to the hot oil and ensure they are well coated.
Leave the potatoes to fry for 3-4 minutes without touching them.
Turn the potatoes over and leave for another 2-3 minutes to color the other side.
Add the reserved bacon back into the pan and combine with the potatoes, cooking for another 4-5 minutes.
Season the dish with salt and pepper before adding the chopped spring onions.
Cook for an additional 4-5 minutes, mixing gently to avoid breaking the potatoes.
