Add 14 oz can of beef broth to a bowl.
Add 2 heaping tablespoons of tomato paste to the bowl.
Add 2 teaspoons of salt, 1 teaspoon of garlic powder, 1 teaspoon of rosemary, and 1 teaspoon of thyme to the bowl.
Add 1 teaspoon of Worcestershire sauce and 1/4 cup of all-purpose flour to the bowl.
Mix all the ingredients in the bowl together.
Place half of a large onion, 3 carrots, and 3 celery stalks in the bottom of the crock pot.
Add the 2.5 lb roast beef on top of the vegetables in the crock pot.
Pour the mixed broth and seasoning mixture over the roast and vegetables in the crock pot.
Cover the crock pot and set it to cook on high for 4 hours or low for 8 hours.
Peel and cut 2 medium potatoes into smaller pieces to boil faster.
Boil the potatoes in water with 1 teaspoon of salt until fork tender.
Mash the boiled potatoes and add 1/2 cup of milk, adjusting as needed.
Add 2 tablespoons of butter and 1/2 teaspoon of salt to the mashed potatoes and mix until combined.
Strain the gravy from the pot roast to make it clear before serving.
Plate the pot roast, mashed potatoes, and vegetables, and serve with gravy.
