1 onion, chopped
5 garlic cloves, minced
2 teaspoons tomato paste
1/4 teaspoon mixed herbs
1/2 teaspoon chili flakes
1/2 teaspoon salt
270 ml double cream
1/2 cup pasta water
200 g tagliatelle pasta
Fresh parsley, chopped
3 tablespoons Parmesan cheese, grated

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Fry the bacon until crispy. Remove from the pan and place on paper towels to drain. Once cool, cut the bacon into small pieces.

In the same pan, add 2 tablespoons of butter and 2 tablespoons of olive oil.

Add the chopped onion and minced garlic. Fry until golden brown.

Stir in 2 teaspoons of tomato paste, 1/4 teaspoon of mixed herbs, 1/2 teaspoon of chili flakes, and 1/2 teaspoon of salt. Mix well and cook for about 2 minutes.

Pour in 270 ml of double cream and 1/2 cup of pasta water. Cook until the sauce thickens, about 5 minutes.

Add the cooked tagliatelle pasta to the pan with the sauce. Toss to coat the pasta evenly.

Stir in the chopped bacon, 3 tablespoons of grated Parmesan cheese, and some fresh parsley.
