Spanish Chicken Fricassee

1 lb drumsticks
4 chicken thighs, bone-in and skin-on
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter
1 onion, chopped
1 cup sliced mushrooms
2 cloves minced garlic
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup dry white cooking wine
1 teaspoon fresh thyme
1 bay leaf
1/2 cup heavy cream
1/4 cup fresh parsley, chopped

Drizzle olive oil over chicken drumsticks and thighs and massage them.

Season both sides of the chicken with salt and pepper.

Heat a cast iron pan and melt unsalted butter.
