Veggie Burgers - Two Ways | Fleur & Mike

Ingredients
- ●1 can (15 oz) chickpeas, drained and rinsed
- ●1 cup roasted red peppers, chopped
- ●1/2 cup breadcrumbs
- ●1/4 cup onion, finely chopped
- ●2 cloves garlic, minced
- ●1 tsp cumin
- ●1/2 tsp smoked paprika
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 cup fresh parsley, chopped
- ●1 tbsp olive oil
- ●Burger buns, for serving
- ●Lettuce, tomato, and other toppings as desired
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- 3Add the chopped roasted red peppers, breadcrumbs, onion, garlic, cumin, smoked paprika, salt, black pepper, and parsley to the mashed chickpeas. Mix until well combined.
- 4Form the mixture into burger patties, about 1/2 inch thick.
- 5Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown.
- 6Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are heated through.
- 7Remove from the oven and let cool slightly before assembling the burgers.
- 8Place each patty on a burger bun and top with lettuce, tomato, and any other desired toppings.
- 9Serve immediately and enjoy your Chickpea and Roasted Red Pepper Burger.

- ●1 cup grated zucchini
- ●1 cup grated carrots
- ●1/2 cup chopped bell peppers
- ●1/2 cup breadcrumbs
- ●1/4 cup chopped fresh parsley
- ●1/4 cup grated Parmesan cheese
- ●1/2 tsp garlic powder
- ●1/2 tsp onion powder
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 tsp smoked paprika
- ●1 egg
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a large bowl, combine the cooked quinoa, grated zucchini, grated carrots, chopped bell peppers, breadcrumbs, parsley, Parmesan cheese, garlic powder, onion powder, salt, black pepper, smoked paprika, and egg.
- 3Mix all the ingredients until well combined.
- 4Form the mixture into burger patties, about 1/2 inch thick.
- 5Place the patties on a baking sheet lined with parchment paper.
- 6Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown.
- 7Remove from the oven and let cool for a few minutes before serving.
- 8Serve on a bun with your favorite toppings such as lettuce, tomato, and avocado.
