Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup roasted red peppers, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp olive oil
  • Burger buns, for serving
  • Lettuce, tomato, and other toppings as desired

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  3. 3Add the chopped roasted red peppers, breadcrumbs, onion, garlic, cumin, smoked paprika, salt, black pepper, and parsley to the mashed chickpeas. Mix until well combined.
  4. 4Form the mixture into burger patties, about 1/2 inch thick.
  5. 5Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown.
  6. 6Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are heated through.
  7. 7Remove from the oven and let cool slightly before assembling the burgers.
  8. 8Place each patty on a burger bun and top with lettuce, tomato, and any other desired toppings.
  9. 9Serve immediately and enjoy your Chickpea and Roasted Red Pepper Burger.

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/2 cup chopped bell peppers
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 egg

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a large bowl, combine the cooked quinoa, grated zucchini, grated carrots, chopped bell peppers, breadcrumbs, parsley, Parmesan cheese, garlic powder, onion powder, salt, black pepper, smoked paprika, and egg.
