Start by making homemade dill pickles. Combine 1 cup white distilled vinegar, 1/2 cup water, 2 tbsp sugar, 1 1/2 tbsp kosher salt, 1 tbsp coriander seeds, and 1 tsp black peppercorns in a pot and bring to a boil over medium-high heat.

Prepare 5 pickling cucumbers using a mandolin, slicing them about 1/4 inch thick. Place them in a heat-proof jar.

Once the liquid is boiling, pour it over the cucumbers in the jar. Add 2 cloves of lightly bruised garlic and a few sprigs of fresh dill. Let it cool to room temperature.

For the burger sauce, mix together 3/4 cup mayonnaise, 1/3 cup yellow mustard, 1/3 cup ketchup, 1-2 tbsp thinly sliced chives, 1 tsp granulated sugar, 1 tbsp Worcestershire sauce, and 2 cloves of grated garlic. Season with salt and pepper to taste and whisk until combined.

Slice 1 yellow onion very thinly using a mandolin. Cut 1 medium heirloom tomato into 1/4 inch thick slices. Cut 1 red onion into rings about 1/4 inch thick.

For the smash burger, take 1 lb of 75-80% lean ground beef and divide it into 2 oz balls. Roll them into balls, then slice your burger buns in half and optionally toast them in butter.

Heat a carbon steel griddle over medium-high heat. Once hot, place two beef balls on the griddle, add a mound of thinly sliced onions on top, and smash them down to about 1/4 inch thick. Season with salt and pepper.

Cook for 1-2 minutes, then scrape underneath and flip the patties. Season again with salt and pepper and add a slice of American cheese on each patty. Sear for an additional 30 seconds, then stack one patty on top of the other.

To assemble the smash burger, place the bottom bun on a plate, add the sauce, pickles, and the double cheesy patty, then top with the soft top bun.

For the thick burger, use 1 1/2 lbs of 75-80% lean ground beef, forming patties about 6 oz each. Roll them into loose balls, then press them out slightly larger than your buns.

Heat a stainless steel pan over medium-high heat with a touch of oil. Once hot, add a patty and press it out to ensure full contact with the pan. Season generously with salt and pepper and sear for 2-3 minutes.

Flip the patty and add a couple tablespoons of unsalted butter and a small handful of fresh thyme to the pan. Tilt the pan and baste the burger with the melted butter and thyme.
