Ingredients

  • 4 medium potatoes, peeled and cubed
  • 2 medium onions, finely chopped
  • 2 green chilies, slit
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 2 tbsp mustard oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. 1Heat mustard oil in a pan over medium heat.
  2. 2Add the chopped onions and sauté until they turn golden brown.
  3. 3Stir in the ginger and garlic paste, and cook for another minute.
  4. 4Add the turmeric, cumin, coriander, and red chili powder, and mix well.
  5. 5Add the cubed potatoes and green chilies, and stir to coat the potatoes with the spices.
  6. 6Season with salt and add a splash of water to help cook the potatoes.
  7. 7Cover the pan and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender.
  8. 8Once cooked, remove the lid and let any excess water evaporate, stirring occasionally.
  9. 9Garnish with fresh coriander leaves before serving.
