Instructions
- 1Preheat the oven to 400°F (200°C).
- 2Sauté chopped onion and minced garlic in olive oil until translucent, about 3-4 minutes.

- 4In a bowl, combine cream cheese, cheddar cheese, and diced ham.
- 5Add the cooled spinach mixture to the cheese and ham mixture. Season with salt, black pepper, and nutmeg. Mix well.
- 6Roll out puff pastry on a floured surface and cut into squares.
- 7Place a spoonful of the filling in the center of each pastry square.
- 8Fold the pastry over to form a triangle and seal the edges with a fork.
- 9Beat an egg and brush it over the tops of the pastries for a golden finish.
- 10Place the puffs on a baking sheet lined with parchment paper.
- 11Bake in the preheated oven for 15-20 minutes, or until golden brown.
- 12Remove from the oven and let cool slightly before serving.

Instructions
- 1In a mixing bowl, combine the all-purpose flour, cocoa powder, salt, and sugar.
- 2Add the almond flour and mix well.
- 3In a separate bowl, mix the cold water, vinegar, and melted butter.
- 4Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- 5Knead the dough on a floured surface for about 5 minutes until smooth.
- 6Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- 7Preheat the oven to 375°F (190°C).
- 8Roll out the dough thinly and cut into circles to form the cannoli shells.
- 9Wrap the circles around cannoli molds and bake for 10-12 minutes until crisp.
- 10Let the shells cool before removing them from the molds.
- 11In a bowl, mix the ricotta cheese, powdered sugar, vanilla extract, and chocolate chips until smooth.
- 12Fill the cooled cannoli shells with the ricotta mixture and top with fresh raspberries and sliced almonds.
