1

Chop the ends off the zucchini and cut it into bite-sized pieces, then place in a bowl and set aside.

2

Chop a shallot or use a fourth of an onion and set aside.

3

Smash garlic to remove skins and then mince it.

4

Cut the chicken breast into uniform bite-sized pieces using a fillet knife or scissors.

5

Marinate the chicken with Sassone spice blend, mixing well to coat, and let it sit in the fridge for at least 30 minutes, covered with plastic wrap.

6

Heat the Always Pan over medium high heat and add avocado oil once hot.

7

Add the marinated chicken to the pan and sauté until almost cooked through, then remove chicken to a clean bowl.

8

Add a drizzle of avocado oil to the pan, then add the shallots and cook for 1-2 minutes.

9

Add the zucchini to the pan and sauté for 2-3 minutes, then add the minced garlic and cook for another minute.

10

Add water to the pan, cover, and bring it to a boil.

11

Add Right Rice to the boiling water, stir quickly, and then add back all the cooked ingredients including the chicken, nestling the chicken into the rice.

12

Cover the pan and turn off the stove, letting it sit for 10 minutes.

13

Use a meat thermometer to check that the chicken is cooked to 165 degrees Fahrenheit.

14

Stir everything together and cover for an additional 5 minutes for better texture.

15

Serve in bowls or meal prep containers, topping with a squeeze of lime and fresh cilantro.
