Start by washing the chicken with vinegar or lemon juice.
In a mixing bowl, add the chicken and season it with chicken bouillon, mustard, mayonnaise, and black pepper.
Mix the chicken well using a fork to ensure the seasoning penetrates.
Let the chicken marinate for at least 30 minutes, preferably overnight if possible.
While the chicken marinates, peel the green plantains and cut them in half or into thick slices.
Soak the plantain slices in salted water to prevent them from browning.
Prepare the salad by chopping cabbage and carrot into thin strips.
Make a pico de gallo by chopping tomato, bell pepper, onion, cucumber, and cilantro, then mix them together with lime juice and salt.
Prepare a dressing by mixing mayonnaise, a little bit of ketchup, lime juice, warm water, and sugar to taste.
Heat oil in a large skillet over medium heat.
Add the marinated chicken to the skillet and cook until browned on all sides, about 10-15 minutes.
Remove the chicken from the skillet and set aside.
In the same skillet, fry the plantain slices until golden brown, about 3-4 minutes per side.
Drain the fried plantains on paper towels and season with salt.
Serve the chicken with fried plantains, salad, and pico de gallo on the side.
