2 tbsp olive oil (extra virgin)
2 eggs
1 cup milk
¼ cup parmesan cheese (for topping)

Pour the wet ingredients over the dry ingredients and stir until everything is well incorporated.

Transfer the batter to the prepared pan and top with the remaining parmesan cheese.

Take to the oven and bake for 45 minutes or until done.
