Sweet potatoes add nutrients and flavor.
Peel the potatoes to remove skin, eyes, and bruises.
Soak peeled potatoes in cold water to prevent oxidation.
Grate half of the potatoes using a food processor's grater attachment.
Add 2 tablespoons of vinegar to a bowl of ice cold water and transfer grated potatoes to this water.
Let grated potatoes sit in the water for at least 10 minutes.
Cut the remaining potatoes into large rough dice and place in the food processor with enough cold water to cover them.
Pulse the potatoes to roughly chop them, then drain and transfer to another bowl of acidulated water.
Rinse the chopped potatoes in several changes of cold water until the water is clear.
Drain the potatoes and transfer to a clean tea towel, wringing out as much water as possible.
Heat clarified butter in a pan until liquid, then add the grated potatoes, ensuring they are covered in the fat.
Cook the grated potatoes over medium high heat for about 5 minutes until al dente, stirring occasionally.
Drain the grated potatoes, reserving the clarified butter, and spread them out on a plate to cool.
Repeat the blanching process with the chopped potatoes, cooking them until al dente and then draining.
Combine the cooled grated and chopped potatoes in a large mixing bowl.
Mix in a small amount of cornflour, onion powder, and garlic powder to bind the mixture.
Weigh out the mixture into 75 gram portions and roll each into a compact ball.
Shape each ball into a triangle.
