3 bone-in skin-on chicken breasts

Heat a small amount of oil in a skillet until hot.

Sear the chicken breasts skin-side down in the skillet until browned, about 5-6 minutes.

Season the other side of the chicken breasts with kosher salt, coarse black pepper, thyme, and basil while they are browning.

Transfer the seared chicken breasts to the slow cooker.

Add about 1.5 cups of liquid (apple juice and water) to the slow cooker, ensuring the chicken is not fully submerged but has plenty of liquid.

Cover the slow cooker and set it to high for 3-4 hours or low for 5-6 hours, checking for doneness.

After cooking, remove the chicken from the slow cooker and let it cool before deboning.
