500 gr orzo pasta

Melt 50 gr of butter in a pressure cooker and brown the beef brisket all over (about 4 minutes per side).

Chop 5 onions and brown them in the same pot the meat was in.

Add 4 cloves of garlic to the pot.

Return the browned meat to the pot, add 1 pint of water, and set the pressure cooker to boil for 30 minutes.

Prepare the sauce by mixing 100 gr of tomato puree, 1 soupspoon of salt, ½ teaspoon black pepper, ½ teaspoon mild paprika, ⅓ teaspoon cinnamon, 2 soupspoons of olive oil, and 3 bay leaves together.

After the meat has cooked, open the cooker, add another pint of water and the tomato mix.

Set the pressure cooker to boil for another 30 minutes at a lower intensity.

Meanwhile, boil 500 gr of orzo pasta for 2 minutes less than the indicated cooking time on the label.

Return the cooked pasta to a new oven-going dish, add the meat and enough sauce to coat the pasta without overwhelming it, and add some additional sauce on top.

Crumble 100 gr of feta as a top layer and place in a hot oven for 20 minutes to melt the feta and build a crust.
