Green olives or pickles can provide a similar briny flavor.
Turn on the high sauté setting on the Instant Pot and set it for 30 minutes.
Add a couple tablespoons of olive oil to the Instant Pot and let it heat up.
Add 6 cloves of minced garlic to the pot and sauté until fragrant.
Add 1 teaspoon of anchovy paste (optional) and mix it in with the garlic.
Stir in 2 teaspoons of ras el hanout and 3/4 teaspoon of Aleppo pepper.
Add a 28-ounce can of whole peeled tomatoes (with juice) to the pot and mash them slightly to break them up.
Turn off the sauté function and set the pot aside.
Prepare the cauliflower by removing any bad bits and outer leaves, and making a deep cut into the stem about 1-1.5 inches deep.
Nestle the whole cauliflower into the sauce in the pot, ensuring it is covered.
Set the Instant Pot to pressure cook on high for 3 minutes.
Once cooking is finished, turn off the Instant Pot and release the pressure valve.
Carefully remove the cauliflower from the pot using tongs and set it aside.
Transfer the sauce to a separate bowl to avoid scraping any burnt bits from the bottom of the pot.
Add chopped green olives, golden raisins, and a bit of cilantro to the sauce and mix well.
Taste the sauce and add about 1/4 teaspoon of salt if needed.
Cut the cauliflower into halves or quarters for serving.
Plate the cauliflower and drizzle some sauce over it, adding more sauce as desired.
Top with additional cilantro and burrata if using, and sprinkle with black sea salt.
