Sautéed Spinach

8 cups fresh spinach
1 tablespoon butter
1 tablespoon bacon grease
2 small yellow onions
4 cloves garlic
1 tablespoon olive oil
1/4 cup white wine (Chardonnay)

Remove stems from fresh spinach, pressing down to measure 8 cups.

Heat a skillet on high.

Add 1 tablespoon of butter and 1 tablespoon of bacon grease to the skillet.

Slice 2 small yellow onions into rings and add to the skillet.

Add 4 cloves of chopped garlic to the skillet.

Add 1 tablespoon of olive oil to the skillet.

Cook the onions on medium heat until caramelized, about 4-5 minutes.

Add spinach to the skillet a little at a time, using tongs to flip and mix it in.

Sprinkle a pinch of salt and a little pepper over the spinach as it cooks.

Continue to fold the spinach over until it settles down, adding more spinach as space allows.

Pour in 1/4 cup of white wine and continue to cook until the spinach is fully wilted and mixed with the onions and garlic.

Turn off the heat and transfer the sautéed spinach to a bowl for serving.
