Sautéed Spinach

1 tablespoon extra virgin olive oil
2 cloves garlic
1/4 teaspoon red pepper flakes
10 oz baby spinach
1/2 teaspoon kosher salt
fresh ground pepper
1 oz low-fat cream cheese (optional)
fresh parmesan cheese (for serving)

Heat a large skillet over medium heat.

Add 1 tablespoon of extra virgin olive oil to the skillet.

Add 2 cloves of freshly minced garlic and 1/4 teaspoon of red pepper flakes to the oil.

Cook the garlic and red pepper flakes for about 1 minute, stirring occasionally.

Add 10 oz of baby spinach to the skillet, tossing to coat with the garlic oil.

Continue to toss the spinach as it wilts down, about 2-3 minutes.

Add 1/2 teaspoon of kosher salt and fresh ground pepper to taste.

If desired, add 1 oz of low-fat cream cheese and stir until melted for a creamier dish.

Serve the sautéed spinach in a dish and grate fresh parmesan cheese over the top.
