4 cups fresh spinach
2 cloves garlic
1 tablespoon lemon zest
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon red pepper flakes

Add olive oil, sliced garlic, and lemon zest to a wide skillet over medium heat.

Cook until the oil is bubbling around the garlic.

Pile in the spinach, noting that it looks like too much for the pan but will wilt down quickly.

Add a generous pinch of salt.

Once the bottom layer of leaves have started to wilt, toss the leaves around the pan.

Keep tossing so that all the leaves have a chance to hit the bottom of the skillet.

When the spinach looks bright green and is mostly wilted, remove the pan from the heat.
