Sautéed Spinach

4 cloves garlic thinly sliced
20 oz fresh spinach
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon crushed red pepper

Heat a Dutch oven over medium heat.

Add 2 tablespoons of extra virgin olive oil to the Dutch oven and let it get hot.

Add 4 cloves of thinly sliced garlic to the oil and let it brown for about 1 to 2 minutes.

Add 20 oz of fresh spinach to the Dutch oven a few handfuls at a time.

Cover the Dutch oven and let the spinach wilt down for about 3 to 5 minutes, stirring occasionally.

Once the spinach is wilted, remove it from the heat.

Add 1 tablespoon of lemon juice, 1/4 teaspoon of crushed red pepper, and 1/4 teaspoon of salt to the spinach.

Stir everything together to combine the flavors.

Serve the sautéed spinach on a plate, optionally sprinkling some nuts on top.
