4 cups fresh spinach
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice

Start with a large pile of spinach in a deep pan.

Heat the pan over medium high heat.

Optionally add oil, but it's not required since spinach is mostly water.

Use tongs to grab and flip the spinach as it cooks down.

Continue adding more spinach as it cooks down.

Monitor the heat; too low will make it watery, too high will cause sticking.

Cook until reduced to about one cup of cooked spinach.
