Preheat the oven to 350°F (175°C).
Spray oil on the bottom of a baking pan and on the tops of the tomatoes.
Sprinkle sea salt on the tomatoes and roll them around to coat.
Roast the tomatoes in the oven for 20 minutes.
Boil 1 cup of walnuts in 4 cups of water with 1 teaspoon of sea salt for 25 minutes.
Strain the walnuts and let them sit until ready to use.
Chop the boiled walnuts into small pieces and set aside.
In a pan, heat 1 tablespoon of oil over medium heat.
Add 1.5 cups of green peppers, 1.5 cups of white onion, and 1.5 cups of mushrooms to the pan and sauté for 8-10 minutes until tender.
Add 0.5 tablespoon of onion powder to the sautéed vegetables.
If needed, add more oil to the pan to keep the mixture moist during cooking.
Remove the roasted tomatoes from the oven and let them cool slightly.
Transfer the tomatoes to a food processor.
Add 1 tablespoon of onion powder, 2 teaspoons of sea salt, 1 tablespoon of basil, 1 tablespoon of oregano, 1 tablespoon of grape seed oil, 1 tablespoon of agave, and 4 teaspoons of cayenne (optional) to the tomatoes in the food processor.
Pulse and then puree the mixture until chunky.
Pour the tomato sauce into the sautéed walnut mixture and stir to combine.
Bring the mixture to a boil, then reduce to a simmer and cover with a lid.
Let the sauce simmer for 1.5 hours, checking every 30 minutes if necessary.
Prepare a salted sour cream sauce by peeling and chopping 1 medium zucchini and adding it to a mixer cup.
Add 2 tablespoons of hemp seeds and 2 pitted dates to the mixer cup with the zucchini.
