Prepare an 8 lb spiral cut ham, bone-in, preferably Berkshire.
Make the pork rub by mixing 1/3 cup dark brown sugar, 1/3 cup granulated sugar, 1/4 cup smoked paprika, 2 tablespoons garlic powder, 1 tablespoon onion powder, 1 tablespoon ground ginger, 1 tablespoon black pepper, and 1 teaspoon ground rosemary in a bowl.
Put on gloves to apply the rub to the ham.
In a medium saucepan over medium heat, combine 1 cup dark brown sugar, 1/2 cup honey, 1/2 cup Dijon mustard, 1/4 cup yellow mustard, and 1/4 cup apple cider vinegar. Stir until the sugars dissolve and set aside.
Add spices to the glaze: 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon ground cloves.
Use yellow mustard as a binder on the ham to help the rub stick.
Generously apply the rub all over the ham, including the underside, ensuring it is well coated.
Prepare the smoker by adding 3 oz of wood chips (apple or cherry recommended) and a pan of water to create steam.
Place the ham in the smoker and smoke it, monitoring the internal temperature with a digital thermometer.
Once the ham reaches the desired temperature, remove it from the smoker and let it rest before slicing.
