Bacon and Egg Sandwiches

12 slices turkey bacon
24 eggs
1/2 cup skim milk
1/2 cup cheddar cheese (shredded)
1/2 teaspoon salt
1/2 teaspoon ground pepper
12 whole wheat English muffins (toasted)
any desired toppings (avocado, mushrooms, tomato, sauces, etc.)

Preheat the oven to 350 degrees F.

Line a baking sheet with foil and lay out the turkey bacon slices in a single layer. Bake for 15-20 minutes, or until crispy. Remove from oven and let cool.

Meanwhile, whisk together the eggs with milk, cheddar cheese, salt, and pepper to taste.

Remove the bacon and foil from the sheet, then pour the eggs onto the same baking sheet you used for the bacon (no need to clean it). Bake for 15-20 minutes, or until the eggs are set.

To assemble the sandwiches, toast the English muffins and then add 1-2 slices of bacon, a slice of the eggs, and your favorite toppings. Enjoy!
