Ground oats are gluten-free and healthier.
Roughly chop 2 cups of cauliflower and blanch it in boiling water until very soft.
Put the blanched cauliflower in a food processor and process until it reaches a breadcrumb-like consistency.
Transfer the processed cauliflower to a microwave-safe bowl and cover it.
Microwave the cauliflower for about 1-1.5 minutes to soften it further.
Let the cauliflower cool for about 10 minutes after microwaving.
Dump the cooled cauliflower into a clean cloth and squeeze out all the liquid to ensure it's dry.
In a bowl, combine the drained cauliflower with 1/4 cup Panko bread crumbs, 1/4 cup egg whites, 1/2 cup cheddar cheese, 1/4 teaspoon salt, 1/4 teaspoon onion powder, 1/2 teaspoon garlic powder (omit if using garlic scapes), and black pepper.
Add 2 tablespoons of nonfat Greek yogurt to the mixture and mix until well combined.
Scoop the mixture and shape it into small logs resembling tater tots.
Place the shaped tots on parchment paper sprayed with cooking spray.
Bake the tots in a preheated oven at 400°F for about 10-12 minutes, flipping halfway through to ensure even browning.
Remove the tots from the oven and serve hot.
