Creamy Spinach Mushroom Lasagna

Dice the onion and place it in a bowl.
Smash the garlic cloves and add them to the onion bowl.
Slice the mushrooms and add them to the bowl with the onion and garlic.
Squeeze out all the fluid from the frozen spinach and chop it roughly.
Heat 2 tablespoons of olive oil in a pan over medium heat.
Add the garlic and onions to the pan, along with a little pepper and a tiny bit of salt. Sauté until the onions are translucent.
Add the sliced mushrooms to the pan and sauté until they start to release moisture.
Taste the mushroom mixture and adjust seasoning, adding more pepper and no additional salt.
Add the prepared spinach to the mushroom mixture, along with about 1 teaspoon of Italian seasoning.
Mix everything together and let it cool down.
In a separate bowl, combine the can of mushroom soup with about 1 cup of milk and a pinch of nutmeg. Mix well.
Spread a little of the soup mixture on the bottom of an 8x8 inch baking dish.
Layer no cook lasagna sheets over the soup mixture.
Add a layer of the mushroom and spinach filling over the lasagna sheets.
Add a layer of cottage cheese, mozzarella, and grated parmesan cheese on top of the filling.
Repeat the layering process with more lasagna sheets, mushroom filling, and cheeses until all ingredients are used, finishing with a layer of soup mixture and cheeses on top.
Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit).
Cover the dish with foil and bake in the oven for 25 minutes.
After 25 minutes, remove the foil and return the lasagna to the oven for an additional 8 to 10 minutes to brown the top.
