Blend together half an onion, half of a red bell pepper, 3 garlic cloves, 1 tablespoon sweet smoked paprika, 1 teaspoon dry oregano, 1 teaspoon dry thyme, 1 teaspoon dry dill, 1 tablespoon apple cider vinegar, and half a cup of apple cider to make an adobo.

Rub salt and pepper under the chicken skin and add some of the adobo under the skin.

Add the remaining adobo to the chicken and drizzle with olive oil.

Bake the chicken in the oven at 350°F (180°C) for 40 minutes.

Boil 4 white potatoes until tender, about 25 minutes.

Make a compound butter with room temperature butter, 1 teaspoon garlic powder, 1 teaspoon onion powder, half a teaspoon dry dill, and salt and pepper to taste.
