Cut the brie cheese into thin slices.

Butter 2 slices of bread.

Put slices of tomato on the unbuttered side of one piece of bread, top with the thinly sliced brie, chopped onions, and a sprinkle of chopped chives & black cracked pepper.

Put another slice of bread on top, buttered side out (you will end up with a sandwich that is buttered on the outside).

Heat up a non-stick frying pan, and cook the sandwich on low to medium heat for 2 to 3 minutes on each side until it is golden and crispy on both sides and the cheese has started to melt.

Cut in half and serve straight away.
