Heat several tablespoons of olive oil in a pot.

Add 1 large chopped onion and sauté until it turns golden brown.

Add 700 grams of fresh spinach (washed three times) to the pot and cover to let it wilt for 2-3 minutes.

Once the spinach has wilted, mix it with the rice and onion.

Spread the mixture evenly in a baking dish.

Add a little warm water to the mixture in the baking dish.

Bake at 375°F (190°C) for 30 minutes.

Crack 6 eggs over the top of the dish after baking for 30 minutes.
