1/4 cup mirin

2 cloves garlic
2 green onions
1 slice ginger (1/4 inch thick)
1/4 cup water
1/4 cup miso
1 tablespoon rice vinegar
1 teaspoon sugar
1 tablespoon sesame seeds
2 teaspoons Korean red pepper flakes
1 tablespoon mayonnaise
1 tablespoon sesame oil
3 cloves garlic (finely chopped)

Combine 1/4 cup sake, 1/4 cup mirin, and 1/4 cup soy sauce in a saucepan.

Add 3 tablespoons sugar and stir until dissolved.

Add 2 cloves of smashed garlic, 2 green onions cut in half, and 1 slice of ginger.

Bring to a boil over high heat, then reduce to medium and simmer for 10 minutes.

Remove the ginger slice after 10 minutes and add 1/4 cup chicken stock, then set aside to cool.

In a mixing bowl, combine 1/4 cup miso, 1 tablespoon rice vinegar, 1 teaspoon sugar, 1 tablespoon sesame seeds, 2 teaspoons Korean red pepper flakes, 1 tablespoon mayonnaise, and 1 tablespoon sesame oil.

Chop 3 cloves of garlic and 2 green onions and mix into the bowl with the other ingredients.

Slice the meat into bite-sized pieces for grilling.
