Wash and soak rice in 3 cups of water overnight.

Place sweet rice, soaking water and 2 pinches of sea salt in a pressure cooker, cover and bring up to pressure for 50 minutes.

Remove cover and pound rice with a heavy wooden mallet until the kernels of rice become mushy and sticky. Set aside.

Prepare fillings and coatings set aside.

Wet hands and roll sweet brown rice into 1” balls. Place a cooked chestnut inside each ball or a dried apricot and then cover completely with the sweet rice.

Roll balls in roasted sesame seeds or nuts and place individually on a serving dish.
