Peel and wash the celery, carrots, onions, and garlic.

2

Slice the garlic thinly and dice the onions after slicing them in half.

3

Slice the carrots into about 3 millimeters in width.

4

Slice the celery as thin as possible.

5

Add 2-3 tablespoons of avocado oil to a 5-quart pot and heat it up.

6

Add the diced onions to the pot and sauté for about 2 minutes.

7

Add the sliced celery and 2-3 teaspoons of salt to the pot, stirring to help the vegetables cook faster.

8

Add the sliced garlic, 1 tablespoon of chicken consommé seasoning, 3 bay leaves, black pepper, and the sliced carrots to the pot and mix thoroughly.

9

Add the chicken legs to the pot and fill with warm water to cover the top of the ingredients.

10

Mix everything well, cover the pot, and let it cook for 1 hour.

11

After 1 hour, prepare the matzo balls by adding 2 large eggs and 1/4 cup of vegetable oil to the matzo ball mix according to package instructions.

12

Mix the matzo ball mixture thoroughly and let it stand for 15 minutes.

13

After the soup has boiled for 1 hour, drop in the matzo balls, making them small as they will puff up.

14

Taste test the matzo balls to check for fluffiness and softness.
