Welcome to Chantal Essen. Today we will prepare a traditional Capirotada pudding.

We'll need 3/4 cups of water, pecans to taste, peanuts to taste, shredded or flaked coconut to taste, a small cinnamon stick, 2 cloves, 2 tablespoons of lard, raisins to taste, and 1 piloncillo cone.

Using local bread called 'pan frances lagunero', slice 1 1/2 pieces of bread, discarding the edges.

To make the Piloncillo syrup, combine piloncillo and water in a saucepan and bring to a boil.

Once boiling, add the stick of cinnamon and cloves.

After some minutes, strain the syrup to remove the spices.

Lightly fry the sliced bread in the lard until it becomes brown and crunchy.

Layer the ingredients starting with one layer of the fried bread in a baking dish.

Drizzle the bread generously with the Piloncillo syrup.

Add raisins, peanuts, chopped pecans, and flaked/shredded coconut on top of the first layer.

Add another layer of bread, perpendicular to the last layer, and repeat the process with more syrup, raisins, and peanuts.
