Set up the roasting pan with a rack and add about an inch of water.
Add whole star anise and whole cloves to the water in the roasting pan.
Pat the ham dry with paper towels if necessary.
Score the surface of the ham with cuts about 1/2 inch apart and 1/4 inch deep.
Place the ham in the center of a 325°F oven for 20 minutes.
In a mixing bowl, combine brown sugar, honey, Dijon mustard, rice vinegar, cayenne pepper, and black pepper to create the glaze.
Mix the glaze until it reaches a thick, brushable consistency, adding more rice vinegar if necessary.
Remove the ham from the oven after 20 minutes and brush the glaze over it.
Return the ham to the oven for another 20 minutes, glazing every 20 minutes until the internal temperature reaches 130°F, approximately 18 minutes per pound.
For the final glaze, drizzle some of the flavored water from the roasting pan over the ham.
Use a blowtorch to caramelize the glaze on the ham for a crispy finish.
Transfer the ham to a serving platter, garnishing with kale and lady apples.
