Olive oil reduces saturated fat while maintaining flavor.
Heat 2 tablespoons of butter and 1 tablespoon of cooking oil in a pan.
Add 1 small diced yellow onion and 3 crushed cloves of garlic to the pan and sweat them down.
Sprinkle in a little salt and pepper to help the onions sweat down faster.
Add 3 cups of long grain jasmine rice to the pan and stir constantly to toast it for about 7 to 10 minutes until it becomes a little brown and translucent.
Add 2 dry bay leaves and stir to combine.
Add 3 chicken bouillon seasoning packets to the rice, stirring to coat evenly.
Pour in 3.5 cups of chicken stock and 1 cup of water, ensuring the correct liquid ratio for the rice.
Stir everything together and add a little extra black pepper.
Allow the mixture to come to a simmer on medium heat for about 10 minutes.
Once boiling, reduce the heat to medium-low (about 3) and cover the pan with a lid.
Cook for about 20 minutes until all the liquid is absorbed and the rice is tender and fluffy.
