Peel the potatoes and wash them to remove dirt.
Cut the potatoes into slices, about 2mm thick, using a slicer or knife.
Wash the sliced potatoes to remove excess starch until the water is clear.
Soak the potatoes in warm water for about an hour, adding 1 tablespoon of baking powder to the water.
Prepare two pots for frying; fill both with oil for deep frying.
Heat the first pot of oil to about 300-350°F (150-175°C) for the first fry.
Carefully drop the potatoes into the hot oil, ensuring they are in a single layer and not overcrowded.
Fry the potatoes until they start to puff up, then remove them and let them cool slightly.
Heat the second pot of oil to around 400°F (200°C) for the second fry.
Return the partially fried potatoes to the second pot and fry until they are fully puffed and golden brown.
Remove the potatoes from the oil and drain on paper towels.
