Yankee Pot Roast

2 pounds potatoes, chopped
1 pound mushrooms, chopped
2 carrots, chopped
2 celery stalks, chopped
1 roast
1 tablespoon garlic salt
pepper
1 quart beef stock

Season the roast with garlic salt and pepper.

Heat oil in a skillet and sear the roast on both sides for about a minute each until a nice color is achieved.

Transfer the seared roast into the crock pot.

In the same skillet, add chopped celery, carrots, and garlic, and sauté briefly.

Add chopped potatoes and mushrooms to the skillet, stir, and then transfer everything into the crock pot.

Set the crock pot on low and cover it, cooking for about 6 hours.

Check the pot roast after 5.5 hours; if it's starting to fall apart, let it cook for another hour.

Remove the pot roast from the crock pot and shred it using a fork.
