Yankee Pot Roast

3 lbs chuck roast
2 tbsp vegetable oil
1 tsp salt
1/2 tsp black pepper
4 cups beef broth
4 medium carrots, cut into chunks
3 medium potatoes, cut into chunks
1 large onion, quartered
2 cloves garlic, minced
2 sprigs fresh thyme
2 bay leaves
1 tbsp Worcestershire sauce

Preheat the oven to 300°F (150°C).

Season the chuck roast with salt and black pepper on all sides.

In a large Dutch oven, heat the vegetable oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.

Remove the roast from the pot and set aside. In the same pot, add the onions and garlic, sautéing until the onions are translucent.

Add the beef broth, Worcestershire sauce, thyme, and bay leaves to the pot, scraping up any browned bits from the bottom.

Return the roast to the pot, then add the carrots and potatoes around the roast.

Cover the pot with a lid and transfer it to the preheated oven.

Cook for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.

Remove the pot from the oven and let it rest for 10-15 minutes before serving.
